Luqaimat with Date Molasses (sweet dumplings)

Luqaimat are small balls of dough fried until crisp outside and soft inside, served with date syrup. They are a staple Ramadan sweet in the UAE and are shared with neighbours along with harees and madrouba.

Ingredients for Luqaimat with Date Molasses

Method

  1. Mix the yeast with a teaspoon of the sugar and a little warm water and leave 10 minutes until foamy.
  2. Combine the flour, sugar, cardamom, saffron and salt, then add the yeast, rose water and water gradually and beat to a thick, sticky, pourable batter (thicker than pancake batter).
  3. Cover and leave in a warm place for an hour until doubled with bubbles.
  4. Heat the oil to medium heat (about 170°C). Test with a drop of batter; if it browns too fast, lower the heat.
  5. With a wet spoon or your fingers drop small balls into the oil (about 10 per batch), turning constantly until evenly golden.
  6. Lift out and drain on paper towels.
  7. Arrange the luqaimat in a bowl, drizzle with date syrup, sprinkle with sesame and serve hot.
