Kuwaiti Gaboot (traditional Kuwaiti dish)

Gaboot is a popular Kuwaiti dish: dough balls filled with onion and coriander and cooked in chicken broth so they swell and soak up its flavour. It is a winter home dish, found under similar names outside Kuwait, and has no documented history.

Ingredients for Kuwaiti Gaboot

Method

  1. Knead the flour with the salt, oil and water into a soft dough and rest, covered, 30 minutes.
  2. For the filling: fry the onion in the oil with the coriander, turmeric, pepper, salt and loomi until soft; cool.
  3. For the stew: brown the onion in oil, add the chicken, garlic and bzar for 5 minutes, then the tomatoes, paste, loomi, salt and water and cook 30 minutes.
  4. Divide the dough into lime-sized balls, flatten each, put a spoon of filling in the centre and pinch it closed into a ball.
  5. Lower the dough balls gently into the simmering stew, cover and cook on low for 45 minutes until the dough is cooked and the broth thickens.
  6. Return the chicken and serve hot in a deep dish.
