Grilled Fish with Emirati Tatbeela (spice marinade)

The Emirati marinade for fish is simple: salt, turmeric, cumin, bezar, garlic and lemon, rubbed over the fish and stuffed inside with onion and coriander. It suits any fresh fish from Gulf waters and lets the flavour of the fish come through.

Ingredients for Grilled Fish with Emirati Tatbeela

Method

  1. Rinse and dry the fish, and make deep slashes in both sides so the marinade can penetrate.
  2. Mix the salt, turmeric, cumin, bezar, garlic, ginger, lemon and oil into a marinade.
  3. Rub the marinade over the fish and into the slashes. Stuff the belly with the onion, coriander and lemon slices and rest for 30 minutes.
  4. Heat the oven to 220°C with the grill on, or prepare medium-hot charcoal.
  5. Grill the fish for 10 to 12 minutes per side, brushing with a little oil or marinade, until cooked and flaking easily with a fork.
  6. Serve with white rice or bread, daqoos, lemon slices and fresh greens.
