Emirati55 minServes 4

Along the Gulf coast, rice dishes have long been paired with local fish, and fish machboos is one of them. The type of fish and the spices change with the season and the region, and the dish reflects the bond between coastal communities and the sea.
Ingredients for Fish Machboos
- 700 g firm fish fillets
- 2 cups basmati rice
- 1 large onion
- 2 tomatoes
- 3 cloves garlic
- 2 tsp machboos spice mix
- ½ tsp turmeric
- juice of 1 lemon
- 3 tbsp oil
- salt
- about 3 cups water
Method
- Season the fish with salt, turmeric and lemon for 10 minutes.
- Quickly sear the fish in a pan until it firms up, then set it aside.
- Sauté the onion, garlic, tomatoes and spices in the pot.
- Add the water and let it boil for 5 minutes, then add the soaked, drained rice.
- Once most of the water is absorbed, place the fish on top of the rice and cover the pot over low heat for 15–18 minutes until the fish and rice are cooked.
- Serve carefully so the fish does not fall apart.
