Emirati Arabic Coffee (Gahwa)

Gahwa, Arabic coffee, is the symbol of hospitality and generosity in the UAE, poured from the dallah into small cups, starting with the most senior guest. "Arabic coffee, a symbol of generosity" was inscribed on UNESCO's Intangible Cultural Heritage list in 2015 in a joint file from the UAE, Oman, Qatar and Saudi Arabia.

Ingredients for Emirati Arabic Coffee

Method

  1. Bring the water to a boil in a dallah or small pot.
  2. Add the ground coffee, stir and simmer for 4 to 6 minutes, lifting off the heat when the foam rises and returning it.
  3. Add the cardamom (and saffron and clove if using) and simmer for 2 more minutes.
  4. Turn off the heat and let it settle for 5 minutes, then pour into the serving dallah through a strainer.
  5. Serve unsweetened in small handleless cups with dates, filling each cup only a quarter full and starting with the eldest guest.
