Bahraini Khanfaroosh (sweet fritters)

Khanfaroosh is a fried sweet of Bahrain and the Gulf: small discs of egg and rice flour flavoured with cardamom, saffron and rose water. They are served in Ramadan, at Eid and to guests with coffee and tea, and are very popular in Bahraini homes.

Ingredients for Bahraini Khanfaroosh

Method

  1. Beat the eggs with the sugar for 3 minutes until the sugar dissolves and the mixture is pale.
  2. Add the rose water, saffron, cardamom and milk powder and mix.
  3. Combine the rice flour, flour and baking powder, then mix into the batter until it is a thick, cohesive dough (add a splash of water if needed).
  4. Cover and rest 15 minutes.
  5. Heat the oil on medium, shape the dough into small 5 cm discs with a wet hand and fry 2 to 3 minutes per side until golden.
  6. Drain on paper towels, sprinkle with sesame or pistachio and serve warm with coffee.
